Brown Butter Mashed Potatoes

Elevate your Thanksgiving feast with these boursin brown butter mashed potatoes. These creamy mashed potatoes are infused with the tangy , garlicky goodness of boursin cheese and the rich, nutty flavor of brown butter. Each spoonful is a luxurious bite of comfort food, perfect for pairing with your holiday turkey or roast.
What you'll need:
3lbs Yukon gold potatoes
1 cup of brown (reserve 1/4 cup for topping
1 box of boursin garlic & herb cheese
4-5 smashed garlic cloves
2 cups of milk
couple sprigs of rosemary
salt & pepper
chives (for topping)
Directions.
On medium heat melt you butter ( stir frequently) once melted the butter will foam up a bit and subside, you'll see browned specks to form at the bottom ( this takes about 5- 8mins) It should have a nutty aroma. Pour in a bowl to stop the butter from cooking.
Cut the potatoes into to even pieces ( if you don't have a potato ricer you have to peel the potatoes first)
To a large pot add water and salt your potatoes , and bring to a boil until potatoes are fork tender.
While the potatoes are boiling, in a separate pot add your milk , garlic, and rosemary and let that cook on medium low for 10-15 mins. Then strain and set aside.
Drain the potatoes, and then run your potatoes through a potato ricer.
On low heat add your warm milk (add your milk in batches and keep adding more until you get it to a smooth creamy consistency, you may not need to use all of it ), add 3/4 cup brown butter, Boursin garlic and and season with salt and pepper and mix until smooth.
Top the mashed potatoes with the reserved brown butter and chives, and serve immediately. ENJOY!
