Chicken & Dumplings

What you'll need:
1lb chicken breast
1 yellow onion ( chopped)
2 celery stalks ( chopped)
1 large carrot or 2 regular carrots ( chopped)
4 garlic cloves ( minced)
1/4 stick of butter
1/4 cup flour
6 cups chicken broth ( I like to use low sodium)
1 can of low sodium cream of chicken
1 tsp better than bouillon roasted chicken base ( optional)
3/4 cup heavy cream
2 sprigs of thyme +1 sprig rosemary ( tie together with kitchen twine, or just drop the into the pot)
1 box of Red Lobster cheddar bay biscuit mix
chives
neutral oil
Seasonings I used ( measure with your heart) :
cajun seasoning, salt & pepper
Directions:
Drizzle your chicken breast with a little oil. Season with salt, pepper, and Cajun seasoning.
Heat oil in a large pot or dutch oven over medium-high heat. Add the chicken and sear for about 4 minutes per side, until browned and mostly cooked through. Remove and set aside.
Reduce the heat to medium, then add the butter to the pot. Once melted, add onions, carrots, and celery. Season with a generous pinch of salt and pepper. Saute for 4-5 minutes.
Add the garlic and cook for about 30 seconds, until fragrant. Sprinkle in the flour and cook for 2 minutes to remove the raw flour taste.
Slowly pour in the chicken broth a little at a time, stirring until everything is fully combined.
Stir in the cream of chicken, Better Than Bouillon, heavy cream, and seasonings. Mix until everything is smooth and well-combined.
Add the chicken back to the pot along with the rosemary and thyme. Bring to a simmer. Reduce heat to medium-low, cover, and let it cook for 10 minutes.
While that cooks, prepare the biscuit dough according to the box directions.
After 10 minutes, remove the chicken from the pot and cut in to small cubes or shred it. Remove the thyme and rosemary, add the chicken back into the pot and give it a good stir.
Use a small cookie scoop or spoon to drop small scoops of the biscuit dough into the pot. Make sure the dumplings arent toouching so they dont clump together.
Cover and let it cook on medium-low for about 15 minutes, or until the dumplings are cooked through.
Uncover, add chives and gently stir everything together. ENJOY!
