I first had crispy provolone at this restaurant in Venice, Ca called OSPI and i was blown away by how good it was. I just knew i had to recreate it at home. Everyhing about this is so GOOD. It's so easy to make, and i think it may be better than mozzarella sticks.
What you'll need:
6 slices of provolone cheese ( i like to go to the deli and have them slice it for me )
1/2 cup Carbone spicy vodka sauce
Heavy cream
3 eggs (whisked)
1 cup bread crumbs
1 cup flour
grated parmesan
fresh basil (for topping)(optional)
oil ( i used vegetable oil)
Seasonings i used :
italian seasoning, garlic powder, onion powder, salt & pepper ( measure with your heart)
Directions:
Add breadcrumbs to a shallow bowl and add grated parmesan plus all the seasonings listed above. Mix well.
To a seperate bowl add flour and all the seasonings listed above. Mix well.
In a separate shallow bowl crack 3 eggs season with salt and pepper & whisk.
Get 2 slices of provolone cheese and press the edges together so they stick, and repeat process.
Dip the cheese into the flour, then the egg and back into the flour and back into the egg and then in the breadcrumbs.
Place in the freezer for an hour.
Warm up the spicy vodka sauce and add a large splash of heavy cream. Cook for about 5 minutes. Set aside
To a pot add oil and fry until golden brown.
Top the crispy provolone with grated parmesan and fresh basil, and serve with the spicy vodka sauce. ENJOY!
