Roasted Maple Bacon Brussels Sprouts

What you'll need:

  • 1.5 lbs Brussels sprouts

  • 5 strips bacon ( chopped)

  • 1 tablespoon olive oil

  • 2.5 tbsp bacon grease

  • 1 tsp garlic powder

  • 1 tsp + 1/4 tsp of kosher salt

  • 3/4 tsp smoked paprika

  • 1/2 tsp black pepper

  • 2 tbsp maple syrup ( add and extra tbsp if you want it sweeter)

  • 1 tsp balsamic glaze ( plus extra for drizzling)

  • flaky sea salt

  • chives ( for garnish)


Directions:

  1. Preheat your oven to 400 and place an empty baking sheet inside to heat up ( this is where the brussels sprouts will go)

  2. Line a separate sheet pan with foil and bake the bacon until crispy about (14-18 mins). Remove the bacon, chop into pieces and reserve the bacon grease. Increase the oven tempertaure to 425.

  3. Wash the brussels sprouts and pat them completely drive ( moisture prevents crisping).

  4. Cut them stems off, then cut the brussels sprouts in half.

  5. Add the brussels to a large bowl and mix with olive oil, bacon grease, salt, pepper, garlic powder & smoked paprika until well coated.

  6. Carefully remove the hot baking sheet from the oven and place the brussels flat-side down in a single layer.

  7. Roast at 425 for 25-30 minutes, or until caramelized and crispy.

  8. While hot, transfer the brussels to a bowl along with the bacon, warm maple syrup and balsamic glaze and mix well to coat.

  9. Plate and top with flaky sea salt, chives, and an extra drizzle of balsamic glaze. ENJOY!
