Salmon in a Creamy Creole Sauce

This salmon in a creamy creole sauce one pan dinner will be made at least once a week in this household.
What you'll need:
2 salmon fillets
1 tbsp avocado oil
3 tbsp butter (unsalted)
Kosher Salt & Pepper
2 garlic cloves(smashed)
couple sprigs of thyme
EVOO
For The Creamy Creole Sauce:
1 tbsp of butter
2/3 cup heavy cream
1/3 cup or more of chicken broth
1.5-2 tbsp tomato paste
1/4 cup each of green & orange bell peppers
1/4 cup of white onions(diced)
1/4 cup Roma tomatoes (diced)
1 1/2 tsp of creole seasoning
1tsp of garlic and onion powder
1/2 tsp of smoked paprika
Directions :
Add some EVOO to your salmon fillets, season with salt & pepper.
On medium high heat add 1tbsp of butter and avocado oil to your sauté pan. Add your salmon 2skin side down cook for about 4 mins. Flip & reduce the heat to medium add garlic , thyme and 2tbsp of butter.
Baste the salmon in the butter and let it cook for 5mins or until done. Transfer to a wired rack and pour the butter over the top. (I like to place it in the oven at the lowest setting so It can stay warm)
To the same sauté pan add 1tbsp of butter and your veggies & sauté for 4-5 minutes. Add in garlic and sauté for another minute.
Add in tomato paste and heavy cream stirring until combined (if sauce seems to thick add some broth a little at a time )
Add in seasonings, and let it simmer on low heat for 5 minutes.
Serve with rice or noodles and ENJOY
