Zuppa Toscana Soup

Indulge in the rich and hearty flavors of homemade Zuppa Toscana soup! This Tuscan-inspired dish is a comforting blend of savory Italian sausage, crispy bacon, tender potatoes, and hearty kale. Simmereed in a creamy broth, This soup is the perfect meal to warm you up on a chilly day. Every spoonful is a delightful combination of textures and tastes, making it a true wintertime favorite.


What you'll need:

  • 1 lb Italian sausage ( mild, sweet or hot)

  • 6 cups of chicken bone broth ( you can also use chicken broth or stock)

  • 12 oz package of bacon ( reserve some for topping)

  • 1 tbsp of the oil from the sun-dried tomatoes

  • 1 yellow onion (chopped)

  • 6 garlic cloves (minced)

  • 2 tsp tbsp Better Than Bouillon Italian Herb Base (optional)

  • 4-5 russet potatoes (cut in bite sized pieces)

  • 7 oz jar of sundried tomatoes ( make sure to drain the oil)

  • 1 cup of heavy cream

  • 1 bunch of dino kale ( chopped up)

  • 1/2 cup of freshly grated parmesan cheese


Seasonings I used:

  • salt, pepper, garlic powder, onion powder, trader joes Italian style soffritto seasoning blend.

Directions:

  1. In a Large Dutch oven or pot on medium heat add your bacon and once fully cooked remove and chop the bacon & set aside

  2. To the same pot add your italian sausage and cook until browned then remove & set aside.

  3. Remove some of the grease , leaving about 1.5 tbsp in the pot and add 1 tbsp of the sundried tomato oil. Add in your onions, and your seasonings. Saute for 4-5 mins. Then add in your garlic and saute until fragrant about 30-60 seconds.

  4. Add in 1/2 cup of broth and scrape any brown bits from the bottom of the pot. Let that simmer for 2 mins.

  5. Pour in the remainder of the broth , the Italian herb base, potatoes and sundried tomatoes and bring to a simmer. Cook until the potatoes are fork tender ( about 15 mins)

  6. Add in sausage, bacon ( make sure to reserve some for topping) , heavy cream and parmesan cheese. Adjust seasonings. Cook for 5 minutes.

  7. Turn off your heat and add in your kale and cover until the kale has wilted.

  8. Serve in a bowl and top with bacon & parmesan cheese. ENJOY!
