Sardine Toast 2 Ways

Mediterranean-Style Sardine Toast

Ingredients ( Makes 1-2 toasts)

•2 slices sourdough bread, toasted

•1/3 cup Labneh

•1/2 small cucumber, thinly sliced

•1/4 small red onion, thinly sliced

•Harissa, to taste 

•1 can Wild Planet Wild Sardines( In Extra Virgin Olive Oil with Lemon)

•Fresh Dill, finely chopped 

•Za’atar

•Lemon Zest

•Flaky sea salt


Directions

  1. Toast the sourdough until golden and crisp.

  2. Spread an even layer of Labneh over the toast.

  3. Top with slice cucumber and red onion.

  4. Add small dollops of harissa.

  5.  Place the Wild Planet Wild Sardines on top.

  6. Finish with fresh dill, za’atar, lemon zest and flaky sea salt



Pan con tomate

Ingredients ( Makes 1-2 toasts)

•2 slices sourdough bread, toasted

•2 ripe tomatoes, grated

• Extra virgin Olive oil

•Kosher Salt 

•1 small garlic cloves

•1 can Wild Planet Wild Sardines ( In Extra Virgin Olive Oil)

•Flaky sea salt

•Fresh parsley, chopped


Directions:

  1. Grate the tomatoes, then strain to remove excess liquid.

  2. Transfer the tomato pulp to a bowl and season with olive oil and salt.

  3. Toast the sourdough , then rub each slice with the garlic clove while warm.

  4. Spread the tomato mixture evenly over the toast.

  5. Top with Wild Planet Wild Sardine and drizzle with a little olive oil from the can.

  6. Finish with flaky sea salt and parsley.
