What you'll need:
2lbs of drumsticks or chicken thighs
1 tbsp neutral oil, for searing
2 tsp neutral oil, for seasoning the the chicken
3 garlic cloves , minced
1/2 of a yellow onion, sliced
1/2 of a red and green bell pepper, sliced
2 cups chicken broth
2 tbsp flour
2 tbsp butter
Seasonings I used:
(measure seasonings with your heart :) .. except the salt)
1 tsp of kosher salt, spice house house chicken blend , urban accents cajun street seasoning, smoked paprika, black pepper

Place the drumsticks in a large bowl. Add 2 teaspoons neutral oil and season with the salt and seasonings listed above. Toss well, making sure the seasoning coats the chicken evenly, including under the skin where possible. Cover and refrigerate for at least 30 minutes.
Heat a large braiser or a skillet over medium-high heat. Add 1 tablespoon neutral oil. Working in batches if needed, sear the drumsticks for 2–3 minutes per side, until nicely browned. Remove the chicken from the pan and set aside.

Reduce heat to medium. Add the vegetables to the same pan and sauté for 1 minute, Add the garlic and cook for 30 seconds or until fragrant.

Add the butter to the pan and let it melt. Sprinkle in the flour and stir constantly, cooking for 1½–2 minutes to cook out the raw flour taste.
5. Slowly pour in the chicken broth, whisking continuously to create a smooth gravy. Bring to a gentle simmer.

6. Nestle the seared drumsticks back into the gravy, spooning some sauce over the top.
7. Cover the pan with a lid or foil and bake at 350°F for 1 hour. Remove the cover and continue baking for 25–30 minutes, until the chicken is tender and the gravy has thickened.

8. Taste and adjust seasoning if needed. I like to serve with rice and green beans.. ENJOY!
