This vibrant aji verde sauce is the perfect match for my Peruvian chicken recipe. It's creamy, tangy herby, and has just the right amount of heat. It ties everything together and adds a bold fresh flavor that takes the dish to the next level. Made with simple ingredients like jalapenos, lime, cilantro, cojita cheese and aji amarillo paste. It comes together quickly in the blender and tastes amazing on just about everything.
Aji Verde Sauce Recipe
Ingredients:
• 2 jalapeños (deseeded if you don’t like too much spice)
• 3 garlic cloves (roughly chopped)
• 1 ½ tablespoons fresh lime juice
• 1 tsp lime zest
• ½ cup mayonnaise
• ⅓ cup crumbled cotija cheese
• 1 bunch fresh cilantro
• ¼ teaspoon salt (adjust to taste)
• 1 tablespoon aji amarillo paste
• 2 green onions (roughly chopped, only the green parts)
• 2 tablespoons olive oil

1.Add all ingredients to a blender and blend until smooth and creamy. Store in an airtight container in the fridge for up to 5 days. Enjoy!
