Bbq Jerk Chicken Pizza

This bbq jerk chicken pizza is UNREAL. The smoky, spicy jerk chicken brings all the heat, while the pineapple adds a juicy, sweet kick that's chef kiss. The red and yellow bell peppers give it that fresh crunch and the red onions add just the right amount of bite. The bbq sauce? Tangy, smoky, and sweet it ties the whole pizza together. Every bite is a perfect balance of bold, sweet and spicy. It's definitely a must try.
What you'll need:
Makes 2
1.4 lbs of boneless skinless chicken thighs
1/4 cup jerk seasoning
garlic powder, onion powder, dry jerk seasoning & salt ( measure with your heart with the seasonings)
3 tbsp avocado oil + more
1/2 red onion (julienned)
1/2 of a red and yellow bell pepper ( julienned)
Trader Joes pizza crust
mozzarella cheese
bbq sauce
cilantro
pineapple (i used fresh)
Directions:
To a bowl add your chicken thighs, jerk seasoning, garlic powder, onion powder, dry jerk seasoning, salt & 3 tbsp olive oil and mix until well combined. Cover and let it marinate for at least an hour ( the longer the better though) ( i marinate it overnight)
Preheat oven to 425.
To a skillet on medium heat add avocado oil once heated add the onions and bell pepper. Sauté for 3 mins. ( they should still have a crunch to them)
To a separate skillet on medium high heat add 1 tbsp of avocado oil, once heated add your chicken and cook until the chicken reaches an internal temp of 165.
Chop up the chicken into bite sized pieces
Brush olive oil on both sides of the pizza crust and bake in the oven for 3 mins.
Add bbq sauce , mozzarella cheese, onions, bell pepper, pineapple and jerk chicken to the pizza crust.
Bake the pizza in the oven for 12 mins or until the cheese has melted.
Drizzle with bbq sauce and top with fresh cilantro. Slice and ENJOY
