CREAMY DILL SALMON BITES

Indulge your taste buds with these heavenly creamy dill salmon bites. This dish is a symphony of flavors, with the delicate, flaky salmon perferctly complemented by a rich and creamy dill sauce. The bright herbaceous notes of dill dance on your tongue, while the buttery sauce coats every bite. It's a quick and easy recipe that's perfect for a weeknight dinner or a special occasion. Serve over mashed potatoes or rice, and your favorite vegatable, for a truly satisfying meal.


What you'll need:

  • 1 lb of salmon ( cut in cubes)

  • 1 tbsp of olive oil

  • 2 tbsp of butter

  • 1/2 cup of dry white wine or chicken broth

  • 1 tsp dijon mustard

  • 1 cup heavy cream

  • freshly squeezed lemon juice

  • 1-2 tablespoons fresh dill ( chopped finely)

  • half of a shallot ( sliced )

  • 3 -4 garlic cloves ( minced)

Seasonings I used:

  • onion powder, garlic powder, old bay lemon & herb, smoked paprika, salt & pepper . ( Season to your liking)


Directions:

  1. Cut your salmon in bite sized cubes and place in a bowl. Season with the seasonings listed above.

  2. Add the 1 tbsp of olive oil and 2 tbsp butter to a skillet over medium-high heat. When the pan is hot add the salmon. And sear for 2-3 mins and flip over and sear for another 2-3 minutes Right before the salmon is almost done squeeze over some lemon juice and then remove and set aside.

  3. If your skillet is looking a little dry add in another tablespoon of butter and 1 tbsp of olive oil and then add in your shallots and saute for 2 mins. Make sure to scrape up the crispy bits on the bottom of the skillet.

  4. Add in garlic and saute until fragrant.

  5. Add the wine and dijon mustard to the skillet. Stir until the mustard has been incorporated, and let that cook for 1-2 minutes.

  6. Add the cream, dill, a squeeze of some lemon juice & all the seasonings listed above except the smoked paprika. Mix until everything is incorporated.

  7. Cook for about 5 minutes or until the sauce has thickened a bit.

  8. I like to serve with mashed potatoes, and then i'll add the salmon bites and pour over some of the creamy dill sauce, and top with more dill and squeeze over some more lemon juice. ENJOY.
