Crispy Brussel Sprouts

What you'll need
Brussel sprouts
Fresh shredded parmesan cheese (1/4 cup + lots more for topping)
Freshly squeezed lemon juice
Salt & Pepper to Taste
Avocado oil
chives (for garnish)
Splatter screen ( cause there will be oil splatter when placing Brussel sprouts in the oil)
* if you don't have a splatter screen be prepared for oil to splatter everywhere (be very careful)
Directions:
Clean and rinse your Brussel sprouts and make sure to completely dry ( this will reduce the oil splatter)
Cut the Brussel sprouts in half and trim any browned stem ends and peel off any spotty/bruised leaves.
Add avocado oil to a deep saucepan and heat to 375 over medium heat.
Once heated add in your Brussel sprouts. The oil will splatter right away so make sure to cover with a splatter screen for about 2-3 mins.
5. Remove the splatter screen and stir the Brussel sprouts and cook for another 2 mins or until deeply browned.
6. Scoop out the Brussel sprouts making sure shake any excess oil back into the pot. Transfer the sprouts to a bowl and add 1/4 cup parmesan cheese and season with salt and pepper. And mix well. Then squeeze over a little lemon juice and mix again.
7. Add the Brussel sprouts to a plate, and add squeeze over a little more lemon juice and top with lots of parmesan cheese and garnish with chives. ENJOY!
