French toast with a Berry Compote

What you’ll need:

*Makes 5 slices of French toast*

  • Milk bread or brioche bread (cut into 1 inch slices)

  • 2 eggs

  • 2/3 cup heavy cream

  • 1/3 cup vanilla creamer

  • 1 tsp bourban vaniila bean paste or vanilla extract

  •  1tsp or more of cinnamon

  • 1 tbsp each of granulated sugar + brown sugar

  • 1/8 tsp freshly grated nutmeg

  • Pinch of salt

  • 1 tsp of maple syrup

  • 1/2 tbsp of honey

  • Oil

  • Butter

  • Powdered sugar


For the berry compote:

  • 1/2 cup of strawberries

  • 1/2 cup of blueberries

  • 2 tbsp of maple syrup or more (depending on how sweet you like it)

  • A squeeze of fresh lemon juice

  • 1/4 tsp Lemon zest


Directions:

  1. To a sauce pan on medium heat add all the ingredients for the berry compote. Let it simmer for 5 minutes. ( stirring occasionally). Smash down on some of the berries. And let it continue to simmer until thickened.

  2. To a bowl or deep Pyrex dish add in your eggs and whisk. Pour in heavy cream, vanilla creamer, vanilla bean paste, cinnamon, your sugars, grated nutmeg, pinch of salt, maple syrup & honey & whisk well.

  3. Slice your bread into the batter. Dredging them well on both sides.

  4. To a skillet. On medium heat add in oil and some butter . Once the butter has melted add in your bread and turn heat down to low. And let it cook until it has browned and flip over and let the other side brown.

  5. Top with whipped cream, the berry compote and powdered sugar. ENJOY
