Greek Lemon Chicken & Potatoes

What you'll need:

  • 6 skin on bone in chicken thighs

  • 10 garlic cloves ( i suggest using a garlic press)

  • 1/3 cup of olive oil

  • the juice on 3 lemons + the zest of lemon

  • 1 tsp each of fresh oregano & thyme

  • 1 tbsp smoked paprika

  • 2 tsp tsp garlic powder

  • 2 tsp onion powder

  • 2 tsp lemon pepper seasoning

  • 1.5 - 2 tsp kosher salt

  • 1 tbsp dijon mustard

  • 3-4 yellow potatoes ( cut into wedges)



For the Tzaktkzi:(OPTIONAL)

  • 1 large cucumber ( grated)

  • 1 tsp salt

  • 1.5 cups plain greek yogurt

  • 2 garlic cloves( grated)

  • 2 tbsp fresh dill

  • 1 tbsp lemon juice

  • 2 tbsp extra virgin olive oil


Directions for the Greek lemon chicken and potatoes:

  1. Add garlic, olive oil, lemon juice, lemon zest, oregano and thyme, paprika,garlic powder, onion powder , lemon pepper, salt , dijon mustard to a large bowl and mix until well combined.

  2. Add in chicken thighs and potatoes to the marinade and mix until well combined.

  3. Add the potatoes to a baking dish and place your chicken on top of the potatoes. Let that marinate in the fridge for at least an hour.

  4. Let the chicken sit out for at least 15 mins ( allowing it to come to room temperature)

  5. Bake in the oven at @ 400 for 45 mins or until the chicken has reached an internal temp of 165. ( You can also broil the chicken for an additional 5 mins on low if you want the skin to be crispy)

  6. I like to serve with Tzaktkzi and broccolini. ENJOY



Directions for the Tzaktiki :

  1. Grate the cucumber and place on a kitchen towel and gently squeeze out the excess water

  2. In a bowl combine the cucumber, greek yogurt, EVOO, dill, lemon juice , garlic & salt. Chill until ready to use.
