Lasagna Soup

What you'll need:

  • 1lb of italian sausage (mild or hot)

  • 1/2 lb ground beef (i used 80/20)

  • 1 onion (chopped)

  • 8 garlic cloves ( minced)

  • 4 tbsp tomato paste

  • 6-7 cups of broth (depends on how soupy you want it)

  • 24 oz jar of marinara sauce + an additional cup of marinara sauce

  • Better than bouillon Italian herb base (optional)

  • Lasagnette Ricee or Lasagna sheets ( i used 3/4 of a bag) ( if using lasagna sheets use 3/4 of a box)

  • 1/2 cup heavy cream

  • 2 large handfuls of spinach (chopped)

  • fresh basil (chopped) ( as much or a little as you want)

  • 1/2 cup of mozzarella cheese

  • 1/3 cup of freshly grated parmesan cheese

Seasonings i used:

  • italian herb seasoning, onion powder, garlic powder, trader joes italian style soffritto seasoning blend, salt & pepper.

For the Ricotta Mixture:

  • 1 cup ricotta

  • 1/2 cup mozzarella

  • 1/2 cup parmesan cheese

  • 1/2 - 1tsp of lemon zest

  • fresh basil (chopped)

  • a pinch of freshly grated nutmeg (optional)

Seasonings i used:

  • trader joes italian style soffritto seasoning blend, salt & pepper


Directions:

  1. In a pot on medium high heat add oil, once hot dd your italian sausage, beef and salt. When no longer pink, remove & set aside.

  2. Remove all the grease in the pot with a paper towel , and add olive oil & once hot add your onions & seasonings. Sauté until softened (about 4-5 minutes)

  3. Add in garlic and sauté until fragrant (about 30 seconds)

  4. Add meat back to pot along with tomato paste and let that cook for 2-3 minutes

  5. Pour in a cup of broth and make sure to scrape the crispy bits that are stuck at the bottom, and then add the remainder of the broth, marinara sauce, your seasonings and bring to a soft boil.

  6. Pour in your noodles and let it cook for about 10-12 or until al dente.

  7. While the noodles are cooking add your ricotta, mozzarella , parmesan, nutmeg, lemon zest and seasonings to a bowl and mix until everything is combined

  8. Once noodles are done add in heavy cream, spinach, basil, mozzarella & parmesan cheese and let that cook for about 5 minutes.

  9. Serve in a bowl and top with parmesan cheese, mozzarella, ricotta, crushed red pepper, nutmeg & fresh basil & ENJOY!
