Maple Butter

Traders Joe’s Maple Butter went viral, and the girlies sold it out, and it won't becoming back. I was lucky enough to snag one, and it was SO good. I went back to Trader Joe's the next day and it was sold out, and in that moment I was like I know I can make this at home, and I did. It turned out just as good. Maple Butter is just 1 ingredient all you need is Maple Syrup but a good quality Pure Maple Syrup. I hope you enjoy this recipe as much as I do.
What is maple butter?
It's maple syrup that's been transformed into a creamy spreadable, butter-like consistency through a process of crystallization.
What you'll need:
candy thermometer
12oz organic pure maple syrup
Directions:
Pour maple syrup in a pot.
Boil over medium/low until the syrup reaches 235 F. (make sure not to stir)
While the Maple syrup is heating up , prep your ice bath. Just get a bowl fill it with some ice, and a small amount of cold water.
Once the maple syrup reaches the correct temperature place a bowl or pot into the ice bath and immediately pour the maple syrup in the bowl/pot. Let it sit without stirring until the syrup reaches 100 F
Once its reaches 100 F remove from the ice bath , get your stand mixer using the paddle attachment and begin whipping the syrup on low speed and gradually increase to high. Continue to whisk until it thick and creamy and it goes from shiny to dull ( it should take 15-20 mins)
Transfer to an airtight jar , and it should last in the fridge up to 6 months.
PS. You can also use a wooden spoon and mix. This takes about 30 mins (be prepared for a good arm workout lol )
You can spread it on toast, pancakes, muffins etc. You can also put it in your coffee or matcha.
