Marry Me Salmon Bites

For the salmon:

• 1 lb center cut salmon fillet

• olive oil

Seasonings I used: onion powder, garlic powder, old bay, cajun seasoning, salt & pepper

(measure with your heart)

For the sauce:

• 1 tbsp butter

• 1tbsp of the oil from the sundried tomatoes

• 4 garlic cloves

•1/4 cup yellow onion (finely diced)

•1 cup heavy cream

• 1/4 - 1/2 cup chicken stock or broth

• 1/2 cup grated parmesan

• 1/2 cup sundried tomatoes (roughly chopped)

•handful of spinach

Seasonings I used : • Trader Joe’s Italian style soffritto (optional) , Italian seasoning, onion powder,

garlic powder, salt & pepper

(measure with your heart)


Directions

  1. Cut your salmon into cubes.

  2. Add salmon to a bowl , and add olive oil and all of your seasonings. Mix until everything is well combined.

  3. Airfry at 390 for 10 minutes

  4. To a skillet on medium heat add your butter and sundried tomato oil

  5. Once melted add in your onions and the Trader Joe’s soffrito seasoning. Sauté for 4-5 mins.

  6. Add in garlic and sauté for 1 min.

  7. Add in your sundried tomatoes, heavy whipping cream, chicken broth, Parmesan cheese and seasonings.

  8. Simmer the sauce for 5-8 until sauce thickens

  9. Add a handful of spinach and cook until wilted.

  10. Serve with mashed potatoes, top with the salmon bites, and spoon over the sauce, and top with fresh basil. ENJOY!
