Miso Salmon Bites

What you'll need:
1/3 cup miso paste
1/4 cup sake ( i used a Nigori unfiltered sake) *its called Sho Chiku Bai*
1/4 cup mirin
1/3 cup cane sugar
2 lbssalmon ( cut into bite sized cubes)
(if 2 lbs of salmon is too much you can just half all the ingredients)
I will list the measurements below:
2tbsp + 2tsp miso paste
2tbsp = 2tsp cane sugar
2tbsp sake
2tbsp mirin
1lb salmon
Directions:
In a small pot over medium heat, add in the miso paste , sake, mirin, cane sugar and Cook for about 4- 5 mins. Make sure to whisk while cooking until there are no clumps. Remove from heat , and let it cool completely.
Add your salmon to a container, and pour over the marinade and gently mix the salmon bites in the marinade, cover and marinate for 24 hrs in the fridge.
Broil on high for 7-8 or until the top is charred and cooked to your liking. ENJOY!
*I like to serve with rice and broccolini*
