White Truffle Pasta

this white truffle pasta is one of my favorites to make. It’s such a ready dinner recipe to make and it taste so dang good 😋


what you’ll need:

* 4-5 slices of thick cut bacon

* 1 tbsp of bacon grease

* 1 tbsp of sundried oil

* 1/4 cup red onion or shallot ( finely chopped)

* 6-8 pressed garlic cloves

* 1.5 cups heavy whipping cream

* 1 cup parmigiano reggiano

* A couple dashes of some white truffle oil

* 1/4 cup or more of sundried tomatoes (chopped)

* Basil

* 1lb of bucatini or linguine

* seasonings I used : salt, pepper, garlic and onion powder

* Reserved pasta water

Directions:

1. Bake or cook your bacon on the stove , reserve 1 tbsp of bacon grease , and chop the bacon up .

2. To a pan on medium heat add your bacon grease and sundried tomato oil.

3. Add in your onions and sauté until softened

4. Add in garlic and sauté for 30seconds to a minute

5. Add in heavy whipping cream and seasonings and let it cook for 5-8 minutes until it thickens

6. Add in a couple of dashes of truffle oil, parm cheese, sundried tomatoes and bacon ( make sure to reserve some bacon for topping)

7. Boil you noodles according to package ( I like mine al dente)

8. Transfer noodles to the sauce and add as much pasta water as needed( start with a little at a time

9. Add some pasta to a plate , and top with parm cheese , bacon and fresh basil. ENJOY
