Lomo Saltado

What You’ll Need:
• 1 lb ribeye, cut into bite-sized pieces or strips
• Kosher salt & pepper, or Montreal steak seasoning + salt (McCormick) https://go.shopmy.us/p-24249228
• Avocado oil
• 1 medium red onion, cut into thick wedges
• 2–3 roma tomatoes, cut into thick wedges, halved, seeds removed
• 3–4 garlic cloves, minced
• Fresh cilantro, chopped (for garnish)
• Frozen fries — preferably fried, but air-fried works too
• Oil for frying fries (if not using an air fryer)
• White rice — I like the frozen jasmine rice from Trader Joe’s to save time

Sauce Mixture:
• 3 tbsp low sodium soy sauce
• 2 tbsp red wine vinegar
• 1 tbsp aji amarillo paste ( here's a link to the aji amarillo https://go.shopmy.us/p-24247346)
• 1 tsp cumin
• 3 oz beef broth
• ¾ tbsp oyster sauce
• ½ tsp cornstarch for a slightly thickened sauce sauce ( which i prefer) or 1 tsp of cornstarch for a thicker sauce.
Directions:
1. Season your steak with salt and pepper, or Montreal steak seasoning + salt.
2. In a small bowl, whisk together the soy sauce, vinegar, aji amarillo paste, cumin, beef broth, oyster sauce, and cornstarch. Set aside.
3. Fry or air fry your frozen fries until crispy. Season with a little salt. I like to keep mine warm in the oven at 200°F while everything else cooks.
4. Heat a wok or large skillet over high heat with 1 tbsp avocado oil. Once hot, add the beef in batches (don’t overcrowd). Sear quickly ( 1-2 mins per side) until browned, then remove and set aside.
5. In the same pan, add a little more oil if needed. Toss in the red onions and sauté for about 1 minute.
6. Add in the garlic and tomatoes, and sauté another 1 minute.
7. Return the beef to the pan and pour in the sauce mixture. Let it simmer until slightly thickened and everything’s nicely coated ( about 1-2 minutes) Toss in cilantro.
Ways to Serve This:
• I like to serve mine with white rice and fries on the side. I usually spoon the beef over some of the fries so they soak up all that delicious sauce, then drizzle more sauce on top and serve with the rice.
• Or you can toss the fries directly into the wok and mix everything together. If you like saucy, softer fries, this is the move. Serve with rice on the side.
Also, if you love a sauce with every dish like me, the aji verde sauce on top is strongly encouraged.
